How to Make Stew Oxtails
This is an amazing recipe of how to cook stew oxtails. Stewed oxtails or brown stewed oxtails are a staple of the caribbean and loved by many.
This is one of my favorite dishes personally. This dish is made with oxtails of course and brown sugar for the color.
Many delicious are then added during seasoning and also during the cooking process.
Ingredients
- 2 to 3 pounds of oxtails with separated joints
- Salt and pepper
- Extra virgin olive oil
- 1 diced yellow onion
- 1 celery
- 2 cups chicked stock
- 3 cloves of garlic
- One bay leaf
- Pinch of thyme
- Parsley
- 2 carrots chopped
- Extra virgin olive oil
- Salt and pepper
Steps
- Brown the oxtails
- Sauté onions, carrots, celery
- Add oxtails, garlic, bay leaf, thyme, salt, stock, then simmer
- Roast root vegetables
- Add roasted vegetables
- Add some chopped parsley before serving
